And I am also constantly on the search for a healthy baked good that I can enjoy with my morning tea and that will give me a good protein punch to keep me going. The muffins in this link can easily be made vegan by using Earth Balance and non-dairy milk of your choice).
Happy Leap Day! Today is the 29th February - a day we only get once every four years. So enjoy it! My day was disappointingly low on protein, but I was busy and on the go today so it was all about eating what I could when I could. If I had been home more, or if I had had the foresight to bring my Magic Bullet to work, I would have snuck in a protein shake and amped it up today! Ah well. As it was, here are my day's eats.
