
Apple Maple Walnut Protein Muffins
You asked, you will receive!
I have posted my protein muffin recipe before with two other flavour variations:
After posting the chocolate version I asked if you would prefer to see apple maple walnut or banana nut next. You asked for apple maple walnut, so here we go (though I have made the banana nut version as well and will post that soon too!).
I did my best to keep these around 100 calories (if you are not concerned about calories, you can always add a drop extra of maple syrup and use as many walnuts as you like – even stirring some into the batter).
These ones are actually my favourite variety so far! The chunks of apple in them just give a delicious texture, they came out nice and fluffy, and the maple on the top is that perfect touch of sweetness to complement the apple and nuts!

*Note: I did not put any stevia into this recipe as I felt the apple and maple syrup sweetened it enough. Taste the batter; if you feel it needs extra sweetness feel free to add a couple of packets of stevia.
Apple Maple Walnut Protein Muffins
INGREDIENTS (makes 8):
1/3 cup flour
1/3 cup coconut flour
1 scoop vanilla protein powder
1 tsp baking powder
1/4 tsp baking soda
1/2 apple, diced
1/4 cup nonfat Greek yogurt
1/2 cup lowfat cottage cheese
6 tbsp unsweetened applesauce
1 egg
1 tbsp maple syrup
2 tbsp chopped walnuts
DIRECTIONS:
1. Preheat oven to 375 F.
2. Combine dry ingredients in a bowl and stir well.
3. In a blender, add Greek yogurt, cottage cheese, applesauce and egg and blend until smooth.
4. Add wet ingredients to bowl of dry and stir until just combined. Fold in the diced apple.
5. Fill 8 muffin cups with the batter. Sprinkle the walnuts evenly over the top of the muffins. Then drizzle the maple syrup evenly over the top of the muffin batter also.
6. Bake for 15 minutes or until springy to the touch. Enjoy!

Hey Janice! You don’t have to use cottage cheese at all – the best sub would be to use all Greek yogurt. If it’s the dairy that bothers you, sub in soymilk yogurt or coconut milk yogurt (though with the latter you will use some protein). Thanks!

Hi there! I’m sure it would be fine – I would just replace the protein powder with flour (either coconut or any other kind). One scoop protein powder = 5 tbsp, so just use that amount in flour. I use a whey protein powder that provides about 24g of protein per scoop. It’s vanilla flavoured. But you can use any kind :).

Hey Kristine! You can try subbing both the yogurt and cottage cheese for less soy milk to keep the protein – or soy yogurt for the same amount (if using milk just add it at the end and judge how much to use based on consistency of the batter. Don’t want to make it too runny!).
If you can’t tolerate soy you can do the same with any other non-dairy yogurt (coconut milk yogurt for example) or milk, but you will lose some of the protein count. Hope that helps!

Not weird at all! It should be in the natural section of most major supermarkets but if not it will be at any Whole Foods or natural foods store! It’s a great flour as it’s gluten-free, high in protein and super high in fibre. But if you really can’t find it, sub it with almond flour so you still get a high protein flour. And if worst comes to worst, you can always just use regular flour for the whole flour portion!

Aw thank you! I’m sorry to hear you’re not handling coconut flour well. In this recipe almond flour is a good sub for the coconut flour if that works.
It could be the fibre? Coconut flour is the most fibrous of all I believe…could be that? I remember I once tried a Vega protein shake but it just had so much fibre in I couldn’t handle it. When you already have a lot of fibre in your diet it can be too much for your body to have something extra on top!

Haha you can always sub it for regular flour or almond flour. With regular flour you will lose the protein and fibre from the flour, but still have it from the protein powder and Greek yogurt/cottage cheese. With almond flour you’ll keep the protein and just lose a little bit of fibre. Still good though!
