
Two for the Price of One Valentine’s Cookies!
I heart these cookies!
I know that is the lamest pun ever, but it’s still true so I thought I’d say it anyway.
If you can’t decide between your favourite treats this Valentine’s Day, why should you? Just go with both!
This is actually two entirely separate recipes, that can be made entirely separately, eaten separately etc. For the sake of presentation – and because these two flavours go AMAZINGLY well together – I put one heart inside another for the best value two-for-one you’ll see this Valentine’s Day!
Yup, peanut butter and chocolate heart cookies.
Vegan, gluten-free, grain-free and raw peanut butter cookies!
Inside of theΒ chocolate shortbread cookiesΒ I made for the Great Food Blogger Cookie Swap (I omitted the peppermint essence because peanut butter works better with plain chocolate in my mind, rather than mint chocolate ;).
You can make the raw peanut butter cookies into energy balls too – mmmm they are good this way!
With the healthy fats from coconut and peanut butter and a touch of sweetness from a little bit of maple syrup, these babies are a good-for-you treat!
You can also just eat the peanut butter cookies plain of course – who wouldn’t want to be greeted with a plate of these on Valentine’s Day (perfect for a Valentine’s Day party too and they’re super fast and easy to make!):
Raw Peanut Butter Cookies/Energy Balls
INGREDIENTS:
1/2 cup organic smooth peanut butter
2 tbsp maple syrup
1 cup unsweetened shredded coconut
DIRECTIONS:
1. Mix together the peanut butter and maple syrup.
2. Slowly stir in the coconut.
3. Mix together until you can form a dough, and then roll out and use a cookie cutter to cut out cookie shapes, or roll into balls. Refrigerate for a few hours to harden.

Aww that’s awesome, let me know if he loves them! If you’re going to do the heart-in-a-heart style, the trick is to cut the heart out of the chocolate one as SOON as the cookies are out of the oven. Otherwise shortbread gets hard too fast and they’ll just break π

Ooh just mix the coconut and peanut butter together and then when it’s well combined, sprinkle in stevia to taste. The tasting will be the fun part! The maple syrup isn’t necessary as a ‘liquid’ component, so no worries about omitting!
