
Two-for-One Chocolate Avocado Smoothie Pudding

In case it wasn’t obvious, I wasn’t quite sure how to describe this dessert/snack/breakfast? Except that it’s delicious!
As you all know, I am a big fan of recipes that have you in the kitchen for as little amount of time as possible, and because I encourage my clients to always nourish and fuel their body but not restrict their cravings, I decided to work on a decadent green smoothie involving two of my favourite things: avocados and chocolate!
And…because I use ground flaxseed in this smoothie (always a great addition for its Omega-3s!), the longer you leave this to sit the thicker it gets. I actually have half of this smoothie with a sandwich for lunch, for example, and then put the rest in the fridge and by dinnertime it’s thickened up so I have the rest as a pudding for dessert! Nothing like a two-for-one smoothie recipe, right?
Two-for-One Chocolate Avocado Smoothie/Pudding
INGREDIENTS (serves 1):
¼ ripe avocado
1 cup unsweetened vanilla or plain almond milk
1/3 medium banana, very ripe
2 ice cubes (you can omit if your banana is frozen)
1 ½ tbsp cocoa powder or raw cacao powder
1 tbsp ground flaxseed
½ tbsp cashew butter
5-6 drops liquid chocolate stevia (optional – and plain liquid stevia
would work too, as would 1-2 packets powdered stevia or any liquid
sweetener of your choice, to taste)
Optional: You can also add 1 cup spinach leaves to this to up the green power!
METHOD:
Blend all ingredients until completely smooth.
Note: You can reduce the almond milk by half if you want it to be a pudding consistency without having to leave it for a few hours to sit. Also, increasing or reducing the ice can dictate its thickness.
