
Sweet Apple Cake
A couple of weeks ago I gave you the recipe for an apple protein cake that I whipped up.
That is a great low-cal, high-protein healthy snack, but sometimes you just want cake.
This is the recipe that my protein cake was based off (I am posting them in reverse order!). I came up with it because my church was having a fundraising bake sale and I wanted something that could be easily sold. This cake slices up into squares perfectly, so I packaged three squares in a treat bag.
This is sweet, yet still light from the apple. And, of course, I healthified it slightly, so it’s not exactly like you’re being unhealthy eating this cake! It’s sweetened naturally, and instead of butter I used a mixture of coconut oil and applesauce.
Ooh – and before I get to the recipe, let me take the opportunity to wish my brother-in-law Jon a happy birthday! It’s a busy birthday time in the summer, right? Mine was July 1st, my cousin’s and godmother’s birthdays were July 3rd, my brother-in-law’s mother’s birthday was July 4th, and now my brother-in-law’s today. Something about July I guess!
Sweet Apple Cake
INGREDIENTS (serves 9):
3/4 cup granular sweetener of choice (I used half NuNaturals baking blend and half maple sugar)
1/3 cup coconut oil, melted
1/3 cup unsweetened applesauce
3 eggs
3 tsp vanilla
2 1/4 cup flour of choice (I used spelt)
3 1/2 tsp baking powder
1 1/2 tsp cinnamon
3/4 tsp salt
4-5 apples, cored, peeled and diced
DIRECTIONS:
1. Preheat oven to 350 F.
2. Cream oil and sweetener together in a large mixing bowl, till well incorporated. Add eggs one by one until blended, then add vanilla.
3. In a separate bowl blend flour, baking powder, cinnamon and salt.
4. Mix wet and dry ingredients together. Fold in diced apples.
5. Batter will be very thick – don’t worry! Spoon and press into a greased square baking dish. Reserve one of the sliced apples for topping the cake, and press apple slices into the top of the cake – 3 across and 3 down if you want each square to have an apple slice in the top!
6. Bake for 30-40 minutes, until a toothpick inserted in the centre comes out clean. Let cool, then slice into 9 squares and serve with ice cream or whipped cream on top.
Nutrition per square if cake makes 9 squares:
178 cals
5.5g fat (2.5g sat)
27mg cholesterol
110mg sodium
32.3g carbs (4.5g fibre)
2.7g protein

Apple cinnamon work SO well together, though you can omit cinnamon from time to time and apple dishes will taste less fall-like, which allows for them to be enjoyed year-round! Blueberries are fabulous. I’m about to go berry picking tomorrow so I have a feeling there will be more than a few berry recipes on the blog soon!
