
Protein Smoothie Nanaimo Bar Style!
That’s kind of a long title. My bad.
Too many ways to describe this smoothie! Protein smoothies are a big part of my life, and although I usually try and keep them green and healthy, I like to have a ‘treat’ one every once in a while. My Better-than-Ice-Cream Chocolate Protein Shake has been in rotation for a while, but as there was only a pitiful amount of cocoa powder remaining in my cupboard, I decided to take the lovely Char’s recipe for Nanaimo Bar Oatmeal and get a bit creative.
When I was away in March, Char guest posted with a stovetop version of her beloved baked Nanaimo Bar oatmeal.
I used that recipe as my base and made this delicious smoothie. You can also drink this through a straw – it’s not too thick. I just like to change things up from time to time by eating my smoothies with a spoon, like super soft fro-yo :).
(If you like it even thicker, increase the number of ice cubes and/or add a pinch of guar gum to thicken it up!)
Protein Smoothie Nanaimo Bar Style! (inspired by Char’s oatmeal)
INGREDIENTS (serves 1):
5-6 ice cubes
1 scoop vanilla protein powder
2 tsp coconut (shredded unsweetened)
2 tsp cocoa powder
2 tsp custard powder
1/4 cup almond milk
1/4 cup lowfat canned coconut milk
Stevia or other sweetener (agave etc) to taste (I omitted, but if you need it sweeter, add away!)
Pinch of guar gum if you want it thicker
Optional:
Extra coconut for topping
Chocolate chips for topping
DIRECTIONS:
1. Put all ingredients (except optional toppings) in a blender and blend till smooth!
2. Pour into a bowl or glass and sprinkle over toppings.

I’ve never heard of a nanaimo bar…what is it exactly??? I think a great protein smoothie combo is mint and chocolate…indulgent yet refreshing 🙂

Ooh they’re so good! They originated in Nanaimo, BC (where Char is from!), a city on Vancouver Island. Basically they are decadent beyond belief – I can’t have ’em anymore because they’re just loaded with sugar; I need to get onto making a healthier version! The base is a chocolate cookie base, topped with a vanilla or custard icing, topped with melted chocolate. They aren’t baked, usually. Hehe sometimes smoothies in a bowl are so much better! Custard powder is kinda just flavoured cornstarch, I guess. It thickens things up and also turns them a slight yellow colour and gives a bit of a vanilla flavour. You could just use cornstarch and flavour it yourself with some extract. Or you can get it – it’s not expensive and should be in most major stores!

Hey Tessa! Custard powder gives things a bit of a vanilla flavour but really it’s just flavoured cornstarch, and thickens things up well. So you could just use cornstarch and flavour it yourself. I know right, Nanaimo bars are just awesome!

Gotta love Nanaimo bars! I have decided that one of my next healthifying challenges will be healthifying a Nanaimo bar. I don’t know that they’ll ever be healthy (or that we should ever want them to be, really!) but I’m hoping to eliminate some of the butter and sugar that are usually poured into them!

My weekend was fun…although challenging. I learned I’m allergic to wheat and corn, so that pretty much knocks out all the foods I love. 🙁 But I did have a fun Sunday with my mom and Saturday we spent with my husband’s family.
I would think raspberry or peanut butter in place of coconut would be delicious!…or really you could do either of those in place of chocolate and keep the coconut too…
