
Pina Colada Oatmeal
I miss you guys! I’m having a great time on holiday soooo…I thought I’d bring you along with me ;).
(Ignore the HUGE pineapple chunks – I’m a bit of pineapple fiend).
On Monday I left you with this lovely image of pina coladas at sunset:
Ah, they are good.
They’re actually not my favourite rum-based drink, but they rank pretty high on the list!
Well, here’s an easy way to bring your pina colada inspiration into your everyday breakfast. I guarantee:
- it won’t make you drunk
- it will taste as good as a pina colada at sunset (okay, 20% as good? 30%?)
- it will immediately transport you to a warm, tropical beach with the gentle sea breeze in your hair…
Okay, I lied on that last one. I’m not a yogurt ad, so I’m not going to pretend that eating this will take you anywhere, but I do promise it tastes FABULOUS.
After the success of my two previous oatmeal posts (Packed Pumpkin Porridge and Double Chocolate Oatmeal), I figured I was onto a good thing with this oatmeal variation recipe thang. After all, so many of us eat oatmeal on a daily basis for breakfast, so why not change it up a bit, right?
Bonus: the pineapple juice sweetens the oatmeal a lot, so for most tastebuds you won’t need any extra sweetener!
INGREDIENTS (serves 1):
1/2 cup rolled oats
1/2 cup coconut milk (for a really creamy oatmeal, use the canned full-fat type)
1/4 cup pineapple juice
1 tbsp shredded unsweetened coconut (plus extra for topping), optional
A few pineapple chunks (for topping), optional
DIRECTIONS:
1. Heat oats, coconut milk and pineapple juice in a small saucepan over a low heat. Stir in the 1 tbsp of coconut.
2. Bring to a low boil, then reduce heat and simmer until oats thicken up.
3. I remove the oats from the heat and leave them a few minutes to cool – usually it thickens a little more in this time, and I like my oats thick. If you like them runnier, eat right away.
4. Top with extra coconut and pineapple chunks and enjoy!
Nutritional information per bowl (serves 1) – for fewer calories/fat use light coconut milk or a coconut milk beverage. It just won’t be as creamy or as coconutty:

And it worked!!! Yay! Glad to have you back :). Let me know how you like this! You can make it more or less creamy/pineappley by just omitting pineapple juice and using all milk. Or vice versa!

Oh yay I’m so glad! Did you use coconut milk from a can or carton? Either is great but I was trying to cut down on fat for a bit and made it with lowfat canned – oooohhhh my God, so creamy! Just as creamy as with full fat canned, in my opinion. Delicioso!

I had some leftover canned coconut mylk (from baking cupcakes!) so I used that, plus the leftover pineapple juice from pineapple in a can 🙂 haha. It was sooo delicious, and yes, totally creamy! I played with it a little, just to add some bulk:
1/2 cup oats
1/4 cup + 2tbsp pineapple juice
1/2 cup coconut mylk
1/4 cup + 2tbsp water
1 tbsp shredded coconut, plus more for topping
{no pineapple chunks, as I didn’t have any left}
I split it with Dallas because I also made us parfaits (which will be on the blog as well!), and I’m pretty sure he inhaled it in three bites, saying “mmm” each time! haha. Will be making this again 😀
