
Banana Nut Protein Muffins
So I’ve kinda been inundating you with protein muffins in the last few months.
After my first ones – Lemon Poppyseed Protein Muffins – were so popular I asked if anyone wanted any other flavours, so along came:
- Double Chocolate Protein Muffins
- Apple Maple Walnut Protein Muffins (my fave so far)
Banana Nut Protein Muffins
INGREDIENTS (makes 8):
1/3 cup flour (any type, I typically use spelt)
1/3 cup coconut flour
1 scoop vanilla protein powder
1 tsp baking powder
1/4 tsp baking soda
1/4 cup nonfat Greek yogurt
1/2 cup lowfat cottage cheese
3 tbsp unsweetened applesauce
1 large egg
1 medium banana, very ripe
2 tbsp chopped walnuts
DIRECTIONS:
1. Preheat oven to 375 F.
2. Combine dry ingredients in a bowl and stir well.
3. In a blender, add Greek yogurt, cottage cheese, applesauce, banana and egg and blend until smooth.
4. Add wet ingredients to bowl of dry and stir until just combined. If batter seems too dry you can add a splash of non-dairy milk to it.
5. Fill 8 muffin cups with the batter. Sprinkle the walnuts evenly over the top of the muffins.
6. Bake for 15 minutes or until springy to the touch. Enjoy!

i really need to make a batch of your muffins. the reason i haven’t is i haven’t ever bought protein powder and i’m really intimidated by that for some reason (don’t ask me why). any suggestions for what kind to buy and where to get it?

Haha well, if you don’t want to buy protein powder just fill in the amount with extra flour – 1 scoop of protein powder is about 5 tbsp flour. BUT if you do decide to take the plunge, the ones I found taste the best are whey, so if you are okay with dairy – which I think you are – I would recommend those. I use Kaizen Naturals Vanilla Ice Cream flavour, which is sweetened with stevia, but if that’s not available in the US, I know Designer Whey is and although I haven’t tried it myself I have heard tons of good things about it!

Exactly! Though I have on occasion doubled the recipe and made jumbo ones as a breakfast on the go hehe. But no, most of the time I just want a snack with my mid-morning tea that still has some health benefits to it!

That’s why I love banana everything! Green smoothies are fab with a banana thrown in – sweet and it masks the taste of the veggies. And pancakes, oatmeal – it’s all sweeter and better with banana!

I love snacking healthily! Snacks are definitely the one area of our diet that can let us down – which is fine occasionally but as I snack a LOT it’s good to have some of them be healthy lol!
