
Protein Chunky Monkey Cookies – GF, VGN
I wanted to make a protein snack to take to work with me and I wanted something easy that would use up ingredients in my fridge and cupboard. So these cookies were born.
I threw together some gluten-free oats, PB2 (peanut flour), cocoa powder and used banana as the sweetener and binder, so the cookies are naturally sweetened and are an irresistible flavour combo of chocolate, peanut butter and banana. Chunky monkey it is!
Plus, these cookies have just over 100 calories each, with 12g carbs and 10g of protein (this may change based on the protein powder you use; mine had 25g protein per scoop). Not bad!
INGREDIENTS (makes 10 large cookies):
1/2 cup gluten-free oats
1/4 cup oat flour (blended oats)
1/2 cup PB2 or peanut flour
2 scoops vegan vanilla protein powder (could use chocolate!)
5 packets stevia (or liquid chocolate stevia to taste)
Heaped 1/3 cup cocoa powder
1/4 tsp sea salt
1/2 tsp baking powder
3/4 cup mashed bananas (if mixture is too dry, use 1 cup)
1 egg or flax egg (1 tbsp ground flaxseed left in 3 tbsp water for 10-15 minutes)
1/4 cup chocolate chips
DIRECTIONS:
1. Preheat oven to 350 F.
2. Mix all ingredients in a bowl and then drop cookie dough on a greased cookie sheet.
3. Bake cookies for 10-12 minutes. If they are slightly underdone, still take them out – they will continue cooking for a few minutes out of the oven.
