Mocha Protein Muffins – GF, refined sugar-free

My protein muffin recipes are the most pinned and shared recipes on this blog and, while this recipe follows a slightly different formula from my previous recipes, these line up nutritionally and – in my opinion – are the best tasting ever!

If you’re looking for a snack that not only fulfills your chocolate craving but also gives you a hit of protein to sustain you past the 3pm munchies, I think I’ve found it! Just under 100 calories each but with close to 6 grams of protein, zero gluten and fewer than 10g of carbohydrates, these muffins tick the flavour and the nutrition boxes.

Plus, who doesn’t like the combination of coffee and chocolate?

Mocha Protein Muffins – GF, refined sugar-free

Ingredients

  • 1 scoop vanilla or chocolate protein powder (I use whey for maximum protein punch, and it bakes the best)
  • 1/4 cup almond flour
  • 3 tbsp coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp vanilla powder or extract
  • 1 tsp baking soda
  • 1.5 tsp ground coffee
  • 1/4 tsp Himalayan pink salt
  • 1 cup unsweetened apple sauce
  • 2 eggs
  • 3 full droppers of liquid stevia (you could use 3 tbsp maple syrup, honey or coconut nectar here instead)
  • 1/3 cup brewed coffee (make this double-strength)
  • 1/2 cup stevia-sweetened chocolate chips (I like Lily’s brand)

Instructions

  1. Preheat oven to 350 F.
  2. Combine all dry ingredients except chocolate chips.
  3. In a blender, blend wet ingredients.
  4. Combine until just mixed. Stir in chocolate chips.
  5. Divide between 9 muffin cups.
  6. Bake for 20-25 minutes until muffins are baked through.
