Dairy-Free Cauliflower Crust Pizza: GF, Paleo

Cauliflower crust pizzas have really taken off as a popular Paleo/low-carb-inspired trend. You get multiple servings of vegetables just from your crust, and skip the grains and flour of a typical pizza base. Most of these recipes rely on copious amounts of cheese to bind the crust together, but if you are avoiding dairy for various reasons, you might think the cauliflower crust pizza is dead to you – well, rest assured! Never content to leave a good trend untampered with, I went into the kitchen to devise a version without cheese (including the toppings – I used Daiya mozzarella which melts into a similar stringy consistency as mozzarella, so it’s a good substitution!).

Here’s what I came up with!

Dairy-Free Cauliflower Crust Pizza: GF, Paleo

Ingredients

  • 1/2 large head cauliflower
  • 1 egg
  • 1 tsp dried oregano
  • 1/4 tsp Himalayan pink salt
  • 1 tbsp extra virgin olive oil or coconut oil
  • 2 tbsp nutritional yeast
  • 2 tbsp almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil

Instructions

  1. Chop the cauliflower into florets; throw away stems. Pulse the cauliflower in a food processor until it resembles a rice-like consistency.
  2. Place riced cauliflower in a bowl and cover. Microwave on high for 2-3 minutes. Put to one side to cool.
  3. Combine spices, sea salt, oil, nutritional yeast and almond flour.
  4. Once cauliflower is cooled, place it into mesh or a tea towel and wring as well as you can. You ideally want the cauliflower as dry as possible, so wring away to get rid of the water!
  5. Place cauliflower into a mixing bowl and add the oil, spice and flour mixture. Once combined, add in the egg and mix well.
  6. Shape the mixture into two crusts. Place on a baking sheet in an oven preheated to 400F. Bake for 15-20 minutes, until the crust is golden (cooking time can vary wildly depending on your oven, so keep an eye on it from 10 minutes onwards).
  7. Once baked you can freeze and keep for future use or top with tomato puree, cheese or Daiya and toppings. Then just grill until cheese is melted and enjoy.
