Healthy Breakfast Challenge Update!
How has the Healthy Breakfast Challenge been going for everyone?? We have been having some major fun here. My roommates and I enjoyed a baked pumpkin French toast casserole, a la Chocolate Covered Katie, on the weekend. I used xylitol and stevia to sweeten and my non-veggie, regular-eating roomies didn't even detect the different sweeteners or the tofu used. It was a hit! Yeah, it didn't come out too cleanly, but it tasted great...

Better-than-Starbucks’ Pumpkin Cream Cheese Muffins
I've been promising these for a while. And I also promised a food-heavy week on the blog this week. I keep my promises. I'm sorry the muffins took a while, but I also promise they're worth the wait. (You'll see that I kept that promise as soon as you make these treats.) With fall comes the return of Starbucks' pumpkin treats. Pumpkin loaf, pumpkin spice lattes, pumpkin cream cheese muffins...yum, yum, yum. But yuck, in a way, because of a) the price and b) the way I feel after consuming any of these. Lethargic, heavy and with a sugar rush - no fun!
Leek, Spinach, Lentil and Potato Pie
Who said pie has to always be sweet? No, I know, most of you like sweet pie. Hey, I like sweet pie (see the end of this post for more on that)! But I also love my veggies. This recipe PACKS in the veggies. Big time packs them in. That's why it has to have such a long name - because it just can't decide which veggie to promote the most (I know, lentils are technically pulses, but...potato potahto...)
